Dill Tofu Dip
12-ounce block soft tofu, drained and patted dry
1/4 cup fresh lemon juice
3 tablespoons finely minced yellow onion
2 cloves garlic, minced
2 tablespoons chopped fresh dill
2 tablespoons mellow white miso
2 tablespoons water
1 tablespoon balsamic vinegar
1/2 teaspoon sea salt
Freshly ground black pepper to taste
1. Place all the ingredients into a blender, and blend well.
2. Refrigerate for 2 hours, and serve with carrot and celery sticks, as well as colorful bell peppers and radishes.
