Serves 2-3
3 tablespoons corn starch
2 tablespoons cold water
1 ½ cups chocolate soy milk
1 teaspoon vanilla
1 tablespoon honey
¼ cup unsweetened cocoa powder
2 teaspoons matcha green tea powder
½ cup boiling water
*optional: 2 ounces dark chocolate, broken into pieces
1. Dissolve matcha green tea powder in boiling water. Stir in honey.
2. Mix together corn starch and cold water. In a medium saucepan, gently heat corn starch mixture, soy milk, and cocoa powder. Add tea mixture, and slowly bring to bubbly, stirring constantly.
3. If using, stir in chocolate pieces, stirring until smoothly melted. Continue stirring until thickened. Mix in vanilla. Serve warm or cold.
