Simple Stroganoff with Yogurt



Serves 4
 
1 lb. lean beef (round steak), cubed, fat removed
1 tablespoon paprika
2 teaspoons flour
2 teaspoons olive oil
½ cup diced onion
1 cup sliced mushrooms
2 tablespoons brandy
1 tablespoon tomato paste
¾ cup plain yogurt
 
1. Mix flour and paprika in a zip lock bag. Put beef in bag and toss to coat.
2. Heat olive oil in a large skillet. Add the beef and onion and sauté for 5 minutes, turning beef to brown evenly.
3. Add mushrooms and sauté a further two minutes.
4. Reduce heat and stir in brandy, tomato paste, and yogurt. Heat through and serve over whole wheat or whole grain spelt egg noodles.
