Serves 4
4 6-oz salmon fillets
4 jumbo whole garlic cloves, peeled
1 tablespoon olive oil
1 tablespoon dried dill
1 teaspoon wholegrain mustard
1 teaspoon lemon juice
Salt and pepper to taste
1. Preheat oven to 500°. Coat garlic cloves in 1 teaspoon olive oil and roast for 25 minutes, or until tender.
2. When garlic is roasted, mash and add mustard, dill, lemon juice, and remaining olive oil, mixing for form a paste.
3. Rub salmon with salt and pepper if desired. Coat thinly and evenly with garlic paste and place in a baking dish coated with cooking spray. Bake at 400° for 20 minutes, or until fish flakes easily with a fork.
