Swap Smart: The Good Germ

By Nicole Duncan

If you’ve sworn off eggs, you may not be getting enough choline, an essential nutrient necessary for reducing inflammation and keeping your brain functioning properly. What’s a good vegan solution? Wheat germ. Try to eat about 1/4 cup a day by adding it to casseroles, muffins, or pancakes; or by sprinkling some into a smoothie, says Roseville, California–based dietician Jeannie Gazzaniga-Moloo, RD. Other good choline sources include brussels sprouts and broccoli (1/2 cup each), and peanut butter (1 tablespoon). —ND
