The Power of the Press

By Nicole Duncan

Extra-virgin olive oil, the pure, unrefined product of the fruit’s first pressing, can do a whole lot more than just perk up a salad. EVOO, as its fans call it, also reduces your risk of breast cancer, says a Spanish study in BMC Cancer. The polyphenols it contains, called lignans and secoiridoids, inhibit the breast cancer gene HER2. Nope, regular ol’ olive oil won’t do the trick—it loses its polyphenol-content in the production process.
